Tongue Preparation

Wash the beef tongue well under running water.

Place the clean tongue in the pressure cooker and add water until covered. Add the bay leaves.

Close the pressure cooker and cook for approximately 60-90 minutes after reaching pressure, until the tongue is very tender.

Remove the tongue from the pot and, while still hot, carefully remove the outer skin and the harder parts from the base of the tongue. Discard the skin and the hard parts.

Slice the cooked tongue into medium pieces.
Sauce Preparation and Final Cooking

In the same pressure cooker (or another large pot), heat a little oil.

Add the chopped garlic and the leek and sauté until soft and fragrant.

Pour in the tomato sauce and mix well.

Add the sliced beef tongue pieces and the chopped potatoes to the sauce. Stir to incorporate.

Let cook over low heat for about 20-30 minutes, or until the potatoes are tender and the sauce has thickened. Adjust seasoning if necessary.
