  • 1 unitChicken thighs with skin
  • a gostoSalt
  • a gostoBlack pepper
  • a gostoChili flakes

Directions

    Start with the pan still cold and place the thighs skin-side down, without oil. Turn on medium-high heat and let them brown without moving them.

    Meanwhile, season with salt, black pepper, and chili flakes.

    When the skin is well browned and crispy, the chicken itself will release fat and release naturally from the pan.

    Flip the chicken, season the other side, and leave for another 4 minutes.

    Place in a hot oven for approximately 10 minutes.

Ingredients

  • 0.5 unitChopped onion
  • a gostoThyme
  • 0.5 glassWhite wine
  • 1 tablespoonCold butter
  • 0.5 lemonLemon juice
  • a gostoFresh herbs

Directions

    Remove the chicken from the pan and use all the flavor left in it to prepare the sauce using the onion, thyme, and wine.

    Finish with the cold butter to add shine to the sauce, the lemon juice to bring acidity, and the fresh herbs.
