Confit Garlic Paste
Ingredients

- 150 mlolive oil
- 1 unitegg yolk
- 1 unitlemon juice

Place the peeled garlic with the olive oil over very low heat for about 10 minutes, without letting it fry, until the garlic becomes soft and slightly golden.

Remove from heat and let cool.

Mash the confit garlic well and blend with the cooled olive oil, egg yolk, lemon juice, salt, and black pepper until a creamy paste forms.
Meat and Finishing

Skewer the flank steak in a bellows style and roast over coals until it reaches the desired doneness.
