Onion Soup Base

Ingredients

Directions

    In a large pot, add the butter and olive oil. Bring to medium heat.

    Slice the red onions very thinly and add them to the pot.

    Season with salt, which will help the onion release its water and accelerate the caramelization process. Cook over low heat, stirring occasionally, until the onions are well caramelized (about 30-45 minutes).

    Sprinkle the wheat flour over the caramelized onions and stir for 1 minute.

    Pour in the red wine and Worcestershire sauce, scraping the bottom of the pot to release any caramelized residue.
