Preparation of Roasted Vegetables

Directions

    Chop the 3 red onions and 4 tomatoes. Peel and chop the 4 potatoes.

    Let the chopped potatoes soak in water for 3 to 5 minutes.

    Dry the potatoes well.

    Add the dried potatoes, chopped red onions, and chopped tomatoes to a large baking sheet.

Preparation of the Kafta

Ingredients

  • 1 unitBunch of parsley
  • 4 unitGarlic cloves
  • 4.5 lbsGround beef and lamb
  • 1 tablespoonCumin
  • a gostoPaprika
  • a gostoSalt
  • a gostoPepper

Directions

    Chop the 2 white onions.

    In a food processor, blend the chopped onions, the bunch of parsley, and the 4 garlic cloves until a homogeneous mixture is obtained.

    In a large bowl, add the ground beef and lamb.

    Add the blended onion, parsley, and garlic mixture to the ground meat.

    Season with 1 tablespoon of cumin, paprika, salt, and pepper to taste.

    Mix well with your hands, kneading the meat until all seasonings are incorporated.

    Shape the meat mixture into mini skewers (kabobs).

Preparation of the Tahini Sauce

  • 946.35 mlYogurt
  • 473.18 mlTahini
  • 4 unitWhole lemons
  • 946.35 mlWater

Directions

    In a bowl, add the 946.35 ml of yogurt.

    Add the 473.18 ml of tahini.

    Squeeze the juice of the 4 whole lemons into the bowl.

    Add the 946.35 ml of water.

    Mix all ingredients well until a smooth and creamy sauce is obtained.

Assembly and Final Cooking

    Remove the vegetable baking sheet from the oven.
