Thinly slice the onions and soak them in cold water for a few minutes to reduce their strong flavor. Drain well before use.

In a large mixing bowl, combine the flour, water, 1 tablespoon of olive oil, grated Parmesan cheese, salt, rosemary, and pepper. Whisk until you get a smooth, lump-free batter.

Add the drained sliced onions to the batter and mix thoroughly to ensure they are well coated.

Line a baking tray with parchment paper (or simply grease the tray generously with olive oil if you prefer not to use paper) and drizzle olive oil over the base. Spread it evenly.

Pour the onion batter onto the prepared baking tray. Spread it out evenly with a spoon or spatula to create a flat layer.

Drizzle more olive oil over the top of the schiacciata and sprinkle with additional grated Parmesan cheese. Bake in a preheated oven until golden brown and crispy.
