Base (Soffritto) and Fat

    Finely mince the onion, carrot, and celery. The pancetta should also be finely minced.

Meat and Sauce

  • 1 glassDry wine
  • 1 tablespoonTomato paste
  • 200 gTomato sauce
  • 1 as neededVegetable broth or hot water
  • a gostoSalt

Directions

    Add the ground meat and mix well. Let it cook until the meat loses all its water and begins to lightly brown.

    Add the wine and let it evaporate completely.

    Add the tomato paste and tomato sauce. Mix everything.

    Add a little hot broth, partially cover the pot, and let it cook slowly.
