Plantain Base

- 500 gpeeled, ripe, and firm plantains

Cut the plantains into large pieces and place them in a baking dish covered with aluminum foil.

Bake in a preheated oven at 200 °C for 25 to 35 minutes, until soft.

Gnocchi Dough
Ingredients
- 1 unitplantain puree
- 150 gwheat flour
- 1 unitegg yolk
- a gostosalt

Mix the egg yolk and salt.

Add the flour gradually, starting with 120 g and using only what is necessary to achieve a soft dough. Avoid kneading.

On a lightly floured surface, make rolls and cut pieces of approximately 2 cm.

Cook in small batches in salted water with a gentle boil. When they float to the surface, wait 1 more minute and remove with a slotted spoon. Drain well.

- 10 unitsage leaves

Melt the butter in a skillet, quickly brown the sage leaves, and set them aside.
