Scaccia Ragusana (Sicilian Rolled Pizza)
A typical specialty from the city of Ragusa, in Sicily, this rolled pizza has a very thin dough, filled and folded into several layers, with tomato sauce and lots of cheese. A simple recipe, but when it comes out of the oven, it is irresistible!

Scaccia Dough
Ingredients

- a gostoOlive oil

In a bowl, mix the wheat flour, water, olive oil, and dry yeast until a dough forms.

Add salt to the dough and mix well.

Knead the dough for at least 15 minutes. For a better result, knead for 30 minutes.

Assembly and Filling
Ingredients

- a gostoGrated mozzarella cheese
- a gostoGrated parmesan cheese

Sprinkle flour over a clean surface and roll out the dough with a rolling pin, forming a thin rectangle.

Spread a generous layer of seasoned tomato sauce over the entire dough, leaving a small border free.

Cover the tomato sauce with plenty of grated mozzarella cheese and, then, with grated parmesan cheese.

Fold one third of the dough over the filling.

Over the folded part and the remaining exposed dough, spread more tomato sauce.

Add another hearty layer of grated mozzarella cheese and grated parmesan cheese.

Fold the remaining third of the dough over the layers of filling, forming a rectangular roll.

Transfer the Scaccia Ragusana to a baking sheet lined with parchment paper.
