Scottish Shortbread
Shortbread is a traditional Scottish biscuit, my mother's childhood recipe. It is very easy to make and results in a crunchy and tasty biscuit, especially with salted butter.

Dough Preparation
Ingredients
- 200 gramsWheat flour
- 100 gramsCornstarch
- 100 gramsRefined sugar
- 200 gramsCold butter with salt chunks
Directions
- 1
In a large bowl, add the wheat flour, cornstarch, and refined sugar. Mix the dry ingredients well.
- 2
Cut the cold butter (with coarse salt chunks, if possible) into small cubes and add to the bowl with the dry ingredients.
- 3
Using your fingertips, rub the butter with the flour, incorporating it until a homogeneous dough forms, but still with some visible pieces of butter. This helps make the biscuit very crunchy and tasty. Continue rubbing until the dough is well mixed.
