Meat Preparation and Seasoning

Cut the eye of round into strips and then into cubes.

Sear the meat cubes to ensure flavor.

Season the seared meat with salt and black pepper and mix well.
Sauté Base and Meat Cooking
Ingredients
- a gostoonion
- a gostogarlic
- a gostomeat fat
- 1 candark beer
- a gostobay leaf
- a gostochimichurri
- a gostosmoked paprika
- a gostotomato paste
- a gostowater or broth

Roughly chop the onion and garlic.

Melt the fat removed from the meat in the disk and quickly fry the onion and garlic just to brown them and release the browned bits.

Transfer the sauté to a pressure cooker.

Add the dark beer, bay leaf, chimichurri, smoked paprika, and tomato paste to the pressure cooker.

Add the seasoned meat to the pressure cooker.

Add water or broth of your preference until it approximately covers the meat.

Close the pot and cook over low heat under pressure for approximately 45 minutes.

Finishing the Soupy Rice
Ingredients

- a gostocherry tomatoes
- a gostocoalho cheese
- a gostoparsley

Release the pressure from the pot and return the contents to the cast iron disk on the stove.

If preferred, shred the meat on a cutting board using two forks and return it to the disk.

Add the rice and a bit more water for cooking.

Season with salt and crushed red pepper to taste.

Cook in the disk, turning off the heat a little before the desired point, as the disk will maintain heat.

Finish the dish by adding cherry tomatoes, toasted coalho cheese, and plenty of chopped parsley.
