A brilliant technique to prepare quick and incredibly juicy kebabs using ground meat and bulgur.
Kebabs
Ingredients
- 1 kgGround beef
- 200 gLarge onion
- 2 unitGarlic cloves
- 3 tbspGreek yogurt
- 1 tspSalt
- 1 tspSmoked paprika
- 0.3 tspGround cumin
- 0.5 tspCaraway
- 1 tspDried parsley
- 1 tspBlack pepper
- 1 tspCornstarch

Grate the onion using a coarse grater.

Squeeze the juice from the grated onion.

Place 1/3 of the ground meat on a sheet of parchment paper.

Spread the meat in a thin, even layer using a rolling pin.

Cover the meat with another sheet of parchment paper and use the rolling pin to flatten until very thin.

Roll the meat as shown in the video to form the kebab shape.

Place the meat roll in a baking dish.

Repeat the process with the remaining portions of meat.

Season the meat with onion, garlic, yogurt, salt, paprika, cumin, caraway, parsley, pepper, and cornstarch (mixing the ingredients as you prepare).

Bake for 15 minutes at 220°C (425°F) with top and bottom heat and ventilation.

Remove the kebabs from the oven after 15 minutes.

Unroll the kebabs and spread them evenly on the baking sheet.

Grill the kebabs for 3 to 5 minutes to brown them.

Bulgur
Ingredients
- 180 gWashed bulgur
- 1 unitBell pepper
- 1 unitChili pepper
- 3 unitPeeled garlic
- a gostoSalt
- a gostoBlack pepper
- 0.5 tspTurmeric
- 50 gButter
- 2 tbspTomato paste
- 500 mlWater

If cooking the bulgur along with the kebabs, place the bulgur in the oven first.

Add the kebabs to the bulgur after 15 minutes in the oven.

Cover with parchment paper and aluminum foil, but not too tightly.

Bake for 15 minutes at 220°C (425°F).

Remove the aluminum foil and parchment paper and continue baking until all the water has evaporated.
Sauce
Ingredients
- 1 unitPickled cucumber
- a gostoChives
- a gostoChili pepper
- 1 unitGarlic
- 4 tbspYogurt
- a gostoBlack pepper
- a gostoSalt
- 1 tbspLemon juice

Mix all the ingredients for the sauce.
